A Brand Built From Research

The starting point wasn't a design trend. It was a personal connection to Mexico and firsthand research in Oaxaca.

01/06

The Challenge

Launching a restaurant requires more than a menu and a location. It requires an identity that customers can recognize, connect with, and remember.

For Pancho Mexican Kitchen in Little Silver and Colts Neck, New Jersey, the opportunity was to establish a cohesive brand from its earliest stages. The identity needed to work across exterior signage, printed menus, the website, promotional graphics, and the restaurant experience itself.

Start Monday worked alongside the Pancho team from day one, developing and implementing the creative foundation before the restaurant opened.

The challenge wasn't simply to design a logo. It was to build a complete visual world for a new restaurant.

02/06

The Idea

Build a Mexican restaurant brand informed by lived experience and original research.

Start Monday approached the project through a personal cultural connection to Mexico, grounding the creative direction in firsthand experience rather than conventional restaurant design references.

Independent research in Puerto Escondido, Oaxaca, included original photography of landscapes, local signage, architectural surfaces, textures, and everyday visual details encountered throughout the region.

Those photographs became a reference library for the development of Pancho's colors, typography, illustrations, and overall visual personality. Rather than relying solely on familiar Mexican-restaurant design conventions, Start Monday used that personal research to inform a distinctive identity for Pancho.

The inspiration wasn't pulled from a generic mood board. It was discovered firsthand.

The Execution

Start Monday carried the brand across its essential customer touchpoints, moving from visual concept to practical implementation in the restaurant and online.

  • Brand Identity & LogoEstablishing a recognizable mark, typography, and graphic system.
  • Custom IllustrationDeveloping original characters and motifs that gave Pancho its distinctive personality.
  • Menus & PrintDesigning branded materials that balance character with everyday usability.
  • Exterior & Interior SignageConnecting the physical space to the restaurant's identity.
  • Website DesignExtending the experience into a cohesive digital destination.
  • Photography & ContentCreating images and promotional materials for the launch and beyond.

Each piece served a practical purpose while reinforcing a shared visual language. From a printed menu to the exterior sign, the design needed to be recognizable as Pancho.

From the first identity studies through opening day, Start Monday helped turn the brand into a tangible experience.

04/06

The Creative Approach

A personal connection to the culture. An original approach to the brand.

The research process in Puerto Escondido informed an expressive, flexible design language: distinctive typography, bright colors, illustrated characters, and graphics capable of living across many formats.

Rather than applying travel photographs directly as decoration, Start Monday translated observations of landscape, texture, architecture, and signage into a visual direction developed specifically for Pancho.

Original illustrations gave the identity a sense of personality beyond the primary logo. Menus, signage, and digital graphics could change in composition while remaining part of the same recognizable system.

Photography balanced the illustration-led identity by documenting the actual food, people, and restaurant setting, connecting the designed brand with a real experience.

A restaurant brand should feel recognizable even when the logo isn't the first thing you see.

05/06

The Impact

Pancho Mexican Kitchen opened locations in Little Silver and Colts Neck, New Jersey, with a recognizable identity expressed through storefront signage, menus, its website, illustrations, and marketing materials.

The brand was developed as a cohesive creative system rather than a collection of disconnected elements. That approach allowed the identity to carry across physical spaces and digital touchpoints.

Across both locations, the brand could retain a consistent visual personality while adapting to different customer-facing applications.

For Start Monday, Pancho demonstrates the value of early creative collaboration: when the brand is developed alongside the business, every customer-facing detail can work together.

The result was a complete restaurant identity, taken from research and concept through real-world execution.
